Cauliflower & Broccoli Fritters
Makes 6 Servings: Counts towards ½ cup Vegetables, ½ tablespoon Oil

In a large bowl, mix together the riced broccoli and cauliflower, egg, pancake mix, onions, and seasonings.
Using a ¼ measuring cup, spoon out the mixture and roll into balls with your hands
Heat 3 tablespoons of oil in a large heated skillet and place each rolled out fritter about 3 inches apart.
Flatten with a spatula and cook on each side for about 3 minutes until each side is evenly browned.
