Caribbean Shrimp

Caribbean Shrimp

Makes 1 Serving: Counts towards 1 Serving Meat, 1½ tablespoons Oil, 1 Dairy Option

 

INGREDIENTS

 1 Personal Serving Medium Shrimp
 1 ½ tablespoon Coconut Oil
 1 tablespoon Ground Ginger
 ½ tablespoon Allspice
 ¼ teaspoon Nutmeg
 1 tablespoon Granulated Onion
 2 teaspoon Celery Salt
 Red Pepper Flakes, to taste
 2-3 tablespoons Walden Farms Orange Marmalade
 1 oz. Unsweetened Coconut Milk
 1 Cinnamon Stick

 

DIRECTIONS

In a small bowl, mix together all the spices and set aside.

Devein and deshell the shrimp if needed. Toss the shrimp in the spice mixture.

Heat the oil in a pan over medium high heat and then reduce the heat to medium-low. Place the shrimp evenly in the pan and cook 2 to 3 minutes per side or until the shrimp turn pink; remove the pan from heat and remove the shrimp from the pan and add the marmalade, coconut milk, and cinnamon stick to the pan to make a glaze. Reduce heat to low and stir for 1 minute.

Add the shrimp back in and stir until coated.
