INGREDIENTS

Cajun Crusted Tofu with Collard Greens
 2 Personal Servings Wildwood Organic High Protein Tofu
 2 tablespoons Olive Oil
 3 cup Collard Greens, chopped
 2 tablespoons Onion, finely chopped
 1 Clove of Garlic, minced
Cajun Seasoning
 2 teaspoons Sea Salt
 2 teaspoons Garlic Powder
 1 teaspoon Cayenne Powder (or to Taste)
 1 teaspoon Onion Powder
 2½ teaspoons Paprika
 1 teaspoon Black Pepper
 ½ teaspoon Red Pepper Flakes
 1¼ teaspoons Oregano
 1¼ teaspoons Thyme

 

DIRECTIONS

Press the tofu between two paper towels to remove some excess water.

In a small bowl combine all of the Cajun Seasoning ingredients,place the seasoning in an airtight container for storage.

Brush both sides of the tofu with a ½ tablespoon of the olive oil and rub with one tablespoon of the Cajun seasoning.

Grill the tofu until grill marks appear, about 5 to 10 minutes; flip and repeat.

Once cooked, remove the tofu from the grill and cut into cubes.

In a sauté pan, heat the remaining olive oil. Add collard greens, garlic, and onion, and cook until soft.

Add cubed tofu and cook for 1 to 2 minutes to allow flavors to incorporate; remove from heat and serve.
