Cabbage Rolls with Walden Farms Tomato Basil Sauce

Makes 3 Servings: Counts towards 1 Serving Meat, 1½ Cups Vegetables

 

INGREDIENTS

 4 cups of Cauliflower, riced
 1 lbs. Ground Beef
 2 cup Onion, chopped
 1 Head Green Cabbage
 2 tablespoons Parsley, chopped
 1 tablespoon Yellow Mustard
 1 tablespoon Coconut Oil
 2 jars Walden Farms Tomato Basil sauce
 ¼ teaspoon Sea Salt

 

DIRECTIONS

Preheat the oven to 375°F.

Heat a medium pot over medium-high heat, add 3 cups of water and bring to a boil. Add in the cubed turnips and boil for about 15-20 minutes. Until soft enough to mash.

Once soft, mash the turnips with coconut oil and set aside.

In a medium skillet, brown the beef with the chopped onions, mustard and parsley.

Once finished, set on a paper towel lined plate.

In a large pot, add water half way up to the top and bring to a boil. Add in the head of cabbage and let steam for 2-4 minutes until the cabbage leaves start to fall off.

Take cabbage out, let rest for a few minutes to cool. Gently pull leaves off and lay flat. Cut a triangle to take the tough stem out. Add about ¼ cup beef mixture and 2 tablespoons of mashed turnip. Turn in cabbage leaves on the sides and roll up, placing them seam side down in a roasting pan.

Once all completed, pour Walden Farms Tomato Basil sauce over and bake in the oven for 25-30 minutes.
