Broccoli Salad with Lemon Dressing
Makes 2 servings: Counts towards 2 cups vegetables (½ cup of restricted vegetables), ½ tablespoon of oil

Blanche the broccoli by bringing a large pot of water to a boil and placing the broccoli directly into the boiling water, leave the broccoli in the water until it is a more vibrant shade of green, about 1-2 minutes.
While the broccoli blanches, fill a large bowl with ice and cold water. Remove the broccoli from the boiling water and immediately submerge it in the ice water to stop if from cooking further. Once the broccoli is cool remove it from the water and place it on a dry towel to drain.
In a small bowl, combine the Sea Salt, Lemon juice, lemon zest, white wine vinegar, mustard and avocado oil.
Break the broccoli into florets and thinly slice the stalk, slice or tear the basil into thin strips and slice the tomatoes in half. Place all of the vegetables into a large bowl and top with the lemon dressing.
