Broccoli & Mushroom Sesame Roast

Makes 2 Servings: Counts towards 2 cups Vegetables, 1 tablespoon Oil

 

INGREDIENTS

 2 tablespoons Sesame Oil
 1 tablespoon Tamari
 1 tablespoon Rice Vinegar
 ¼ teaspoon Chili Flakes
 2 Cloves of Garlic, minced
 2 cups Broccoli Florets
 1 cup Mushrooms, quartered
 2 Green Onions, chopped

 

DIRECTIONS

Preheat the oven to 375°F; line a baking sheet with foil.

Coat the broccoli florets and mushrooms with the oil and place on the baking sheet; roast in the oven for 25 to 30 minutes, or until desired doneness is achieved.

In a medium bowl, combine the soy sauce, vinegar, chili flakes, and scallions; when the vegetables are done cooking, toss them in the sauce to coat and serve warm or chilled.
