Makes 1 Serving: Counts towards 1½ tablespoons Oil, 1 Egg, 2 oz. Meat, ½ cup Vegetables

Preheat the oven to 350°F.
In a small bowl, mix together the basil, paprika, salt, and pepper; set aside.
Form the chicken sausage into a patty; set aside.
Heat ½ tablespoon of the olive oil in a large skillet over medium high heat; add the sausage patty and cook for 2 to 3 minutes per side until cooked through. When done, remove the patty from the pan and set aside.
In the same pan, reduce heat to medium and heat the remaining tablespoon of olive oil. Crack the egg into the pan and sprinkle with seasonings; cook until desired doneness is achieved.
On a plate, place the patty down first and top with the egg, spinach and bell pepper.
