Breakfast Stuffed Peppers

Preheat the oven to 400°F. Prepare a baking dish by lining the bottom with aluminum foil.
In a skillet, cook the turkey; drain any oil.
Cut the top off each pepper and remove seeds; chop the spinach. Place the peppers in the baking sheet and bake for 15 minutes.
Remove the peppers from the oven and stuff the peppers about 2/3 of the way with spinach and turkey. Crack an egg on top in each pepper.
Bake for 20 minutes.
