Another Delicious 30/10 Recipe

RECIPE SUMMARY

 

Bibimbap

Makes 1 Serving: Counts towards 1 Serving Meat, 1 Egg, 2 cups Vegetables, 2 tablespoons Oil

 

INGREDIENTS

Bibimbap
 1 Personal Serving Ground Pork, minus 1 oz.
 1 tablespoon Coconut Oil
 1 teaspoon Garlic, minced
 Sea Salt, to taste
 Black Pepper, to taste
 2 cups Spinach
 ½ tablespoon Sesame Oil
 ½ cup Cucumber, spiralized
 1 Egg
Vegetables
 1 cup Bean Sprouts
 ½ cup Green Onions, chopped
 ½ tablespoon Coconut Oil
 1 teaspoon Tamari
 ½ teaspoon Garlic, minced
 ¼ teaspoon Ginger
 Chili Powder, to taste

 

DIRECTIONS

Heat a medium frying pan over medium heat and add the coconut oil, garlic, ground pork, salt and pepper; cook thoroughly and set aside.

In the same pan, add the coconut oil for the vegetables and heat over medium high heat; when the oil starts to shimmer, add the bean sprouts, green onions, garlic, Tamari, ginger, and chili powder. When the vegetables start to brown, remove from heat and set aside with the meat.

In the same pan, reduce heat back to medium and add the sesame oil and spinach. Cook until the spinach is just wilted; remove and set aside in the same dish as the meat and vegetables.

Keeping the same pan heated over medium heat, spray with oil and crack the egg into the pan, cooking preferably until over easy or medium.

While the egg cooks, add the cucumber to the meat and vegetables. When the egg is done, place on the top and season as needed.
