Bell Pepper Vegetable Boats

INGREDIENTS
½ cup Bell Pepper, halved and seeded
¼ cup Zucchini, Diced
¼ cup Asparagus Spears, chopped
¼ cup Red Onion, chopped
¼ cup Celery, chopped
2 tablespoons Reduced Fat Feta Cheese
1 tablespoon Avocado Oil
1 teaspoon Salt
½ teaspoon Pepper

Preheat the grill/oven to 400°F.

Place the pepper halves in a foil boat and set aside.

In a bowl, mix together the chopped vegetables, oil and feta cheese; stuff the pepper halves with veggie mixture.

Place on the middle rack in the oven and bake for 25 to 30 minutes.
