Using the water, cook the sloppy joe packet in the microwave according to the directions on the back; add more water if necessary
Preheat the oven to 400°F.
Lightly spray a baking sheet with olive oil and place the bell pepper strips skin side down evenly across the sheet. Bake in the oven for 5 minutes to soften. Once done, remove from the oven and add the sloppy joe mixture and sprinkle the feta cheese evenly over the top. Place back in the oven and cook for another 2 to 4 minutes, until the feta is warm.
Sprinkle the top with the chopped spinach and serve.
