Beef with Garlic Caper Sauce

Beef with Garlic Caper Sauce

Make 2 Servings: Counts towards 1 4oz serving of meat, 1½ tablespoons of oil, ¼ cup vegetables, ¼ cup restricted vegetables

  

INGREDIENTS

 2 personal servings of Filet Mignon Steaks
 Sea Salt, to taste
 Black Pepper, to taste
 3 tablespoons Olive Oil
 ½ cup Shallot, diced fine
 3 tablespoons Capers
 3 Cloves of Garlic, minced
 2 tablespoons Parsley
 1 teaspoon White Wine Vinegar

 

DIRECTIONS

Heat a pan or grill to high heat and coat with a thin layer of oil. Place the steak on the cooking surface and sear on each side. Cook until it has reached the internal temperature of 135°F for medium rare, 145°F for medium, 150°F for medium well. Remove and allow the steak to rest under tented foil for 10 minutes.

While the beef is cooking prepare the garlic caper sauce by heating a small pan over medium heat. Add the remaining oil to the pan then the shallots and garlic. Cook until they are just starting to brown; remove from the heat and add in the remaining ingredients and whisk together.

Serve the beef with the caper sauce over top.
