Beef Kebabs

Combine the olive oil, lemon juice, oregano, fresh mint, garlic, salt and pepper in a small bowl and set aside.
Cut Beef into 1 inch cubes and place in bowl or in a zip lock bag.
Pour the olive oil and lemon juice mixture over the cubed beef, make sure the marinade evenly coats each piece and set in fridge for at least 1 hour, up to 24 hours.
To make the kebabs, thread the beef onto skewers and either grill over medium high heat for 10-12 minutes or place in a single layer on a sheet tray and bake at 400F in the oven for 30-40 minutes.
