BBQ Salad with Lime

Another Delicious 30/10 Recipe

RECIPE SUMMARY

INGREDIENTS

 

Grilled Cauliflower Ingredients:
 ½ head of Cauliflower
 2 tablespoons Walden Farms Thick and Spicy BBQ Sauce
 1 teaspoon Paprika
Salad Ingredients:
 1 cup Cherry Tomatoes, halved
 ¼ cup Green Onions, sliced
 ¾ cup Cucumber, sliced
 2 cups Romaine, chopped
Dressing Ingredients:
 2 tablespoons Lime Juice
 ½ cup Cilantro
 1 clove garlic
 ¼ cup Avocado Oil
 1 Stevia Drop
 Sea Salt to taste
 Black Pepper to taste

 

DIRECTIONS

Heat a grill to medium high heat, and bring a large part of water to a boil on the stove top.

Slice cauliflower into 1 inch thick steaks, and place the cauliflower steak in the boiling water for 3 minutes or until the cauliflower is tender. Remove the cauliflower, pat dry and sprinkle with paprika on both sides. Brush the Walden Farms BBQ sauce onto both sides of the cauliflower steak and grill for 2-3 minutes per side.

In a blender or food processor, combine the dressing ingredients until smooth.

In a large bowl combine the Salad ingredients and toss with the dressing. Remove the cauliflower steaks from the grill and place them on top of the salad and enjoy.
