BBQ Chicken Pizza
Makes 2 servings: Counts towards 2 cups vegetables, 1 egg, ½ a dairy option

Preheat the oven to 375ºF and lay the riced cauliflower out along a parchment lined baking sheet and place in the oven for 10-15 minutes, or until the cauliflower is cooked through. Remove the cauliflower from the oven and allow it to cool for several minutes.
Bring the oven up to 400ºF.
Pour the cauliflower on the sheet pan onto a linen towel, gather the corners and edges of the towel and squeeze out the moisture.
In a food processor pulse the reduced fat feta cheese until it is similar in size to the cauliflower.
Place the cauliflower in a bowl, add the remaining cauliflower crust ingredients, stir to combine.
Line the original baking sheet with a new sheet of parchment and pour the cauliflower mix onto the tray and shape into a circle and flatten with a spatula until ½ inch thick.
Place the tray in the oven and cook until the crust is lightly brown (15-25 minutes) remove the crust from the oven and flip it over and cook for another 5 minutes, remove from the oven and set aside.
Heat Oven to 400ºF.
Dice chicken into ½ inch pieces and coat with 2 tablespoons Walden Farms Barbeque Sauce. Spread remaining sauce over the cauliflower crust.
Distribute chicken and onion evenly over the crust and bake for 10-15 minutes or until the sauce looks bubbly.
Remove the Pizza from the oven and top with cilantro leaves, if desired, and enjoy.
