2 cups Cucumbers or Zucchini
½ cup Mushrooms
4 cups Tomatoes, chopped
1 cup Onion, sliced and separated into rings
½ cup Medium Yellow or Green Sweet Pepper, seeded and cut into thin strips
¼ - ½ teaspoon Crushed Red Pepper
¼ teaspoon Salt

Preheat the oven to 350°F.

In a 2 quart Casserole dish, combine cucumber, tomatoes, onion, sweet pepper, crushed red pepper and salt.

Bake, covered for 45 minutes. Stir, then bake for an additional 30 minutes. Stir once more before serving.
