RECIPE SUMMARY

 

Baked Tilapia with Sassy Salsa

Makes 2 Servings: Counts towards 1 cup Veggies, 1 Serving Meat, 1 tablespoon Oil 

 

INGREDIENTS

 2 Personal Servings of Tilapia Fillets
 2 tablespoons Olive Oil
 1 cup Tomatoes, chopped
 1 cup Red Onion, diced
 1 tablespoon Cilantro, chopped
 1 tablespoon Lime Juice
 1 tablespoon Mrs. Dash Extra Spicy Seasoning Blend
 ¼ teaspoon Ground Cumin
 Sea Salt & Pepper, to taste

 

DIRECTIONS

Preheat the oven to 425°F.

Spray a baking sheet with nonstick cooking spray and place with the tilapia fillets. Brush the top of the fish with the olive oil and sprinkle with salt and pepper; turn over and do the same on the other side.

Bake for 10 to 15 minutes until you can flake the fish with a fork.

Combine the tomatoes, onion, cilantro, lime juice, Mrs. Dash, cumin and salt and pepper in a bowl and mix well. Cover and refrigerate until ready to use.

Serve salsa over the top of freshly baked tilapia.
