Preheat the oven to 400°F.
In a bowl, whisk together the olive oil, lemon zest and lemon juice.
Grease a 9x13 in. baking dish and place the salmon fillets in. Season the tops of the fillets with salt and pepper and turn over; drizzle the tops evenly with the lemon mixture and gently rub over salmon, and season once more with salt and pepper.
Let the fillets rest at room temperature for 10 minutes, then bake for 12 to 16 minutes or until salmon has cooked through.
While the salmon cooks, mix together the mayo, garlic and dill in a bowl to desired consistency; season with salt and pepper to taste and serve over warm salmon.
