Asian Cucumber Salad
Makes 2 Servings: Counts towards 2 cups Vegetables
INGREDIENTS
2 cups Cucumber, chopped
1 cup Red Onion, thinly sliced
¼ cup Rice Vinegar
Juice of 1 Lemon Wedge
1 cup Thai Chili Peppers, sliced
½ teaspoon Salt
DIRECTIONS

Place all chopped veggies in a bowl; mix in the rice vinegar, salt, lemon and chilies and toss until well coated.
