Asian Cabbage Slaw

Makes 4 Servings: Counts towards 2 cups Vegetables 

 

INGREDIENTS

 ½ Head Green Cabbage, thinly sliced
 ½ Head Red Cabbage, thinly sliced
 ½ cup Green Onion, sliced
 ¼ cup Cilantro, chopped
 ¼ Lemon, juiced
 ½ cup Rice Vinegar
 Sea salt, to taste

 

DIRECTIONS

Wash and prep the vegetables; place the vegetables and cilantro in a large bowl.

Add the vinegar and lemon juice; season with salt, to taste and stir to combine.

Let salad sit for 15 to 20 minutes; taste and adjust salt to liking and serve.
