Apricot Jerked Pork

Apricot Jerked Pork

Makes 1 Serving: Each serving counts towards 1 serving protein, 2 tablespoons Oil

 

INGREDIENTS

 1 Personal Serving Pork Chop
 2 tablespoons Coconut Oil
 ¾ teaspoon All-spice
 ½ teaspoon Cinnamon
 1 clove Garlic
 ½ teaspoon Dried Thyme
 Black Pepper to taste
 ½ teaspoon Celery Salt
 2-3 tablespoons Walden Farms Apricot Marmalade
 1 teaspoons Lime Zest
 1 tablespoon Franks Red Hot Sauce or to taste
 1-2 teaspoons Water (Optional)

 

DIRECTIONS

In a small bowl, mix together all the spices and rub onto the meat.

Heat the coconut oil on medium high heat and once hot, reduce heat to medium low and add the pork; sear until golden brown, about 1 to 3 minutes depending on thickness.

Preheat the oven to 375°F. Remove the pork from the pan and place on a foil lined baking sheet, bake in the oven 3-7 minutes or until the internal temperature reaches 155°F.

In the same pan used for the pork, stir together the marmalade, hot sauce and water. Remove from heat and add zest; stir until everything is loose. Set aside until pork is ready and drizzle on top.
