“Apple” Pie Latkes

 1 cup Jicama
 2 tablespoons Avocado Oil
 1 teaspoon Walden Farms Apple Butter (optional)
 1 teaspoon Cinnamon
 1 packet of Stevia
 1 Egg

 ¼ cup Walden Farms Marshmallow Topping
 ½ teaspoon Cinnamon

 

DIRECTIONS

Preheat the oven to 350ºF

Prepare the jicama by peeling and then shredding it. Drain the water out of the jicama by wrapping it in a couple paper towels and squeezing out the excess moisture.

Heat a pan over medium heat and add the oil.

While the oil is heating, combine the 30/10 Plain Pancake Packet, shredded jicama, Walden Farms Apple Butter, Cinnamon, Stevia, and Egg in a medium bowl and stir to combine.

Divide the batter into six equally sized sections and use a spoon to place them into the hot oil. Allow the batter to brown about 1 minute, and then flip the latke and brown the other side. Remove the latkes from the oil and place them on a paper towel lined plate.

Finish cooking the latkes in the oven for 5 minute.

While the latkes are cooking, prepare the topping by combining the Walden Farms Marshmallow Topping and ½ teaspoon of Cinnamon in a small bowl.

Remove the latkes from the oven and serve with the topping.
