Preheat a waffle iron to medium high heat.
In a small mixing bowl, prepare your waffle batter by whisking together your pancake packet, water, cinnamon, nutmeg, coconut oil, apple butter and egg or egg whites. If the batter is too thick, add a little bit more water.
Grease the waffle iron with nonstick cooking spray and pour batter onto it; close the lid and cook for 2 to 3 minutes or until steam stops and check on the waffle. Continue checking on it until it reaches your desired doneness.
In a small blender, combine the peanut butter and syrup and drizzle over the waffle.
